InForum: Scooter’s Coffee kiosk going up along Veterans Boulevard in south Fargo

An EPIC Companies spokeswoman estimates the franchise coffee spot in the Liberty Town Center development will open in a few months.

FARGO – South metro residents will soon have another place to scoot to if they’re looking for a caffeine fix.

A Scooter’s Coffee is well into construction at 3610 Veterans Boulevard S. That is on the north end of Liberty Town Center under development across from the West Fargo School District’s Liberty Middle School.

McKenzy Braaten, vice president of communications for EPIC Companies, said in early January that she anticipates the franchise coffee kiosk will open in the next few months.

The Forum sought comment from a Nebraska attorney that Braaten identified as an owner of the coffee hut, but had received no response as of Monday, Jan. 17.

The slab on grade building is 638 square feet, according to Fargo city permitting documents that were approved in September. The estimated construction cost is $250,000.

Scooter’s Coffee began in 1998 as Scooter’s Java Express by Don and Linda Eckles in Bellevue, Neb.

By 2001, there were five drive-through outlets and the Eckles settled on a franchise model to meet demand. The company’s name changed to Scooter’s Coffeehouse in 2005, then again in 2011 to Scooter’s Coffee.

The Omaha-based corporation is now working towards 400 franchise outlets, according to its corporate website.

According to the Scooter’s 2021 Franchise Disclosure Document (released in May), which details growth during the 2020 calendar, the company had added 50 locations, helping it reach the 300-store milestone. As part of that, the company reported that same store sales had increased 26%.

EPIC’s Liberty Town Center is planned to be a six-building development that includes a mix of housing and commercial and retail space.

Phase I at 3650 Veterans Blvd. includes three mixed-use buildings dubbed The Don, Lincoln and Falcon. Those buildings will offer housing and first floor commercial space, a combination popular in the Fargo-Moorhead-West Fargo area in recent years.

The three buildings to follow are envisioned as being retail and commercial space, according to an email from EPIC directed toward potential investors.
